He's been a really fussy eater lately, but this recipe includes all things he likes. He's particularly fond of peas, so I add a little more than the other vegetables called for. You can play with the ingredients, based on what your little one likes best.
Ingredients:
3 tbs organic olive oil
2 cups cooked brown rice
1/4 cup finely chopped organic carrot
Half onion, finely chopped
1/2 cup frozen peas
1/4 cup frozen organic corn
1/4 cup gluten free Tamari
1 egg, slightly beaten
Directions:
Heat the olive oil in a large skillet or wok. Add onion, stirring occasionally until it begins to caramelize. Add the remaining vegetables. Once cooked, move the vegetables to the side of the skillet. Pour the egg into the center part of the skillet or wok, cook and scramble finely. When the egg is completely cooked, stir in the vegetables. Add the cups or cooked rice to the mixture. Stir together, also adding the soy sauce. Continue cooking on medium-low heat for about another 10 minutes, until all flavors are combined.
