Holiday Sugar Cookies

I was searching for a basic biscuit recipe so I could make my son some fun holiday cookies. I came up with this one, which I altered from a recipe that originally contained dairy.

Ingredients:

3/4 cup sugar
1/4 cup coconut flour
1/4 cup Tapioca flour/starch
1/4 brown rice flour
1/2 tsp xanthan gum
1 egg
1 tsp vanilla extract
1/4 tsp baking soda
1/4 cup coconut milk
Sprinkles (Gluten Free)

Directions:
Preheat oven to 400ºF.

In a large bowl, combine the sugar, flours, xanthan gum, egg, vanilla extract, baking soda and milk.

Stir and knead into a nice and compact dough. Once the dough is together, roll into small balls, Press down flat on baking sheet and cover in sprinkles.

Cook for 10 minutes, or until slightly golden brown.

About Me

I'm Alexia, Mummy to my 2 1/2 year old baby boy, Kieran.

Recently, Kieran was diagnosed with Autism. After much research, I have decided to move him to a Gluten and Casein Free (GFCF) diet, since many parents of children with Autism have reported positive results, including increases in attention/focus, compliance and speech development.

After completing a 'trial month', where Kieran and I tested many GFCF recipes and products, I was amazed by how many great substitutes are out there. With the many successes and failures I expect to encounter along the way, my hope is that this blog will help others get started with basic and successful recipes their toddlers and young children can enjoy.

P.S. I'm constantly trying new recipes, since this is a new world to us. If my son doesn't like it, I don't publish it. Happy cooking for your little one/s!
